Crunchy Coconut Granola

Ingredients

for 10 servings

4 tbsps coconut oil

1 tbsp agave syrup

⅔ cup cashews

⅔ cup almonds

1 ⅓ cups spelt flakes

4 tbsps crushed flaxseed

1 tsp cinnamon

1 pinch salt

⅔ cup coconut flakes

Preparation steps

  1. preheated oven at 180°C/ 350° F (convection, 160°C/ 320°F) Melt coconut oil and agave syrup in a small pot over a low heat.

  2. In the meantime, chop the nuts and mix with spelt flakes and flaxseed. Add cinnamon, salt, coconut flakes, and coconut oil/Agave syrup mixture and mix thoroughly.

  3. Spread the mixture on a baking tray lined with parchment paper and bake for about 15-20 minutes. During baking, mix the granola several times.

  4. Allow the Crunchy Coconut Granola to cool and fill into airtight jars.
