Brain Food Cookies

Ingredients

for 25 biscuits

1 cup spelt flour

1 tsp baking powder

⅔ gram raw cane sugar

1 pinch salt

1 stick butter (softened )

3 banana (ripe)

1 egg

1 cup robust oats

¼ cup slivered almonds

1 tbsp cocoa

2 tbsps chocolate chip

Preparation

1 bowl, 1 hand mixer, 1 baking sheet

Preparation steps

  1. preheated oven to 200 °C/400 °F (convection 180 °C/375 °F). In the bowl of a stand mixer, mix flour with baking powder, sugar and 1 pinch of salt. Add butter in pieces and mix. Peel the bananas, mash them with a fork and add them to the bowl together with the egg and mix well. Fold in oat flakes, almonds, and half of the chocolate chips.

  2. Line a baking sheet with parchment paper. Use a tablespoon to drop the dough onto the baking sheet leaving enough space between the cookies. Sprinkle with remaining chocolate chips and bake for 10-15 minutes. Then let it cool down on a cooling rack.
